7-Ingredient  Raw Key Lime Cheesecake

This key lime cheesecake has a citrus creamy filling with decadent, caramel-like, crust which makes it a perfect desserts for those with savory tooth. All the sweet, savory, tangy notes make a perfect combination of flavor. There will be nothing else to desire after enjoying this dessert…..well… except for more room in your belly.

¾ cup dates

1 cup walnuts

1 tbsp coconut oil

Pinch of salt (optional)


1.5 cup soaked cashews

1 avocado

½ cup maple syrup (or agave or any other liquid sweetener)

¾ cup lime juice

1/3 cup coconut oil

½ tbsp. salt (optional)


1. Put all the crust ingredients into a food processor. Pulse until the mixture sticks together. Press the crust mixture into the bottom of the 8¬inch form.

2. Combine all the filling ingredients in a high-speed blender or food processor and blend until the filling is smooth and creamy.

3. Pour the filling evenly over the crust and smooth with a spatula. Place the cheesecake in to the freezer for at least 3 hours to let is set.

4. Let the pie sit at room temperature for 10 minutes before serving.

Garnish with lime zest and lime slices.
